The cake was created by home economics teacher Jenny Åkerström (1867–1957), who ran a school for girls in Östermalm, Stockholm, and wrote her own cookbooks. In The Princesses’ New Cookbook (1948), the recipe for the “green cake” can be found, which later came to be known as the Princess Cake. Jenny dedicated the books to her students, the three princesses Margaretha, Märtha, and Astrid. The princesses were said to be especially fond of the delicious green cake.
